Chicken Broccoli Alfredo - Freezer Meal

With many busy nights in our house, it's nice to have a healthy go-to meal. While I love slowcooker freezer meals, sometimes I don't plan things very well, and need a heat & eat dinner.
This is exactly that. Add in a side of pasta, steamed veggies, and a can of fruit - and supper is ready in about 15 minutes. Sounds good to me!

Assemble into each freezer bag the following ingredients

  • 1 diced cooked chicken breast
  • 1 cup cooked broccoli (slightly undercooked)
  • 1/2 jar Alfredo sauce
  • 1/2 cup water (optional, we like our sauces thin, and the brand we bought was super thick and too creamy for us)

When you use up the last of the sauce, just dump the water into the jar, cover and shake, to get all the sauce out.

Baggies in the fridge to cool before going in the freezer

Squeeze out all air before sealing the bag. Squish to mix up water and sauce. Freeze flat to maximize space. Can be thawed overnight in fridge, or defrosted in microwave. Heat over stove, or in microwavable bowl (zippy bags melt easily in the micro!).  Serve over hot noodles of your choice. We like rotini best so that the little peices of chicken get nestled in and sneak into our 3 year old's belly :)


Other notes:
We cooked a huge batch of 6 chicken breasts (one package from Sam's Club) in the slow cooker with some chicken broth. I steamed a large bag of broccoli, also from Sam's probably 2 lbs? - we ended up with probably 1.5 or 2 cups of broccoli per bag. Which is not a problem in our house since T will devour it!
